These Malibu Rum Popsicles Turn Cocktails Into Dessert

I hate hot weather, which means when summer comes around, my life revolves around finding ways to staying cool. Aside from parking myself in front of the AC from June through September, I’m also all about icy treats like slushies, ice cream, and popsicles. And now that I’ve discovered this recipe for Malibu rum popsicles, I’m actually looking forward to the sweltering heat.

  1. Booze + dessert? Count me in. I know popsicles aren’t REALLY dessert, but it counts as an after dinner (or mid-afternoon) treat to me. The fact that these are not just deliciously creamy and coconutty on their own but also include Malibu rum basically makes them an immediate winner in my book.
  2. Malibu rum popsicles only require a few ingredients. While there are a few different recipes/variations out there, Diary of a Debutante, for instance, uses canned coconut milk, limeade, maple syrup, honey, lime zest, and of course Malibu rum in hers. Vegan Huggs skips the alcohol (shame!) and also adds a pinch of salt to their version.
  3. Not only that, but they’re really easy to make. You literally just combine all the ingredients in a blender, fill your popsicle molds, and pop them in the freezer for about six hours to freeze. From there, you’re good to go. It really couldn’t be simpler.
  4. You can even get creative with it. Again, consider the flavors that would work well with coconut and rum. The Beach House Kitchen decided to add some delicious pineapple to their popsicles for a piña colada treat that pretty much everyone will love. They actually dip theirs in chocolate for an added bit of fun, though that’s certainly not required. Maybe you even want to add some strawberries or something in yours. If you can dream it, you can make it.
